Isaac Carasso started the first large-scale yogurt production in the early 20th century in Barcelona, Spain. Yes, that's the same Danone we know today. Carasso noticed how many children were suffering from intestinal diseases and poor nutrition. Inspired by Ilya Mechnikov's research, he created yogurt by mixing fresh milk with bacterial cultures. I couldn't find information on whether this milk was raw, as only "fresh milk" is mentioned. However, considering the period (1910-1915) and the fact that milk pasteurization wasn't introduced in Spain until after 1920, it's likely the milk was raw.

For example, after 1-2 weeks of regular yogurt consumption, women in the study group were relieved of almost all symptoms of yeast infections and vulvovaginal candidiasis, unlike those in the control group. Much has changed over the past 100 years. While Carasso's yogurt was meant to feed and heal children, what is the purpose of consuming a product with the following ingredients:
Cultured grade A reduced-fat milk, sugar, water, fructose, modified food starch, less than 1% milk protein concentrate, kosher gelatin, agar, guar gum, lactic acid, calcium lactate, vitamin D3, and sodium citrate.
This question is rhetorical.
Traditionally, milk was most often consumed either fresh or fermented. Different cultures have many fermented dairy products, many of which are still known to us today. However, most of these products' industrial production technology and composition (therefore, and their effect on the body) have undergone significant changes.
Yogurt is one of the most popular and well-known fermented milk products. Yogurts on store shelves most often contain pasteurized homogenized milk, dry/skimmed milk, flavorings, acidity regulators, sugar, added vitamins, etc. Such yogurts have little in common with their ancient ancestor, both in composition and in the benefits they bring.
Ilya Mechnikov can be called one of the popularizers of yogurt. He linked many long-lived people among Bulgarians to the constant consumption of fermented milk products, particularly the influence of lactic acid bacteria on the gut microbiome.
To make the most beneficial yogurt, use whole milk from healthy animals that eat grass or hay and spend time outdoors. Ultra-pasteurized (UHT, sterilized) and/or homogenized milk is not recommended. The most easily digestible yogurt is made from raw milk (which has not been pasteurized or boiled), as it retains all the enzymes, and the protein is not denatured.
I tried to discover the secret ingredients of my wife's wonderful yogurt, but it turned out to be just a good yogurt maker from Luvele with temperature control. :)
