Like any dish, it depends on the ingredients used and how cooks prepare them. Potatoes are a normal part of a proper human diet (except for those who need to reduce carbohydrates due to health issues). But today, cooks usually fry potatoes in cheap refined or hydrogenated seed oils. These oils make french fries unhealthy because they are completely foreign and harmful to any diet.
What exactly is the problem with fast-food french fries?
1. Cooking in seed oil critically increases the dish's linoleic acid (omega-6).
When there's too much linoleic acid, it causes inflammation, which leads to:
Obesity, high cholesterol levels, and hypertension (1, 2)
Chronic inflammation (3)
Hypertension and atherosclerosis (4)
Myocardial infarction and cardiac arrhythmias contribute to stroke risk (5)
A healthy intake of omega-6 is 2% of the total daily calorie intake to ensure sufficiency. (6)
2. Cooking method:
Another problem with frying potatoes is heating carbohydrates in seed oil to temperatures above 212°F (100°C). This creates acrylamide, a substance that might cause cancer. (7, 8)
So, should we ultimately give up our favorite french fries?
Animal fats work great for deep frying, especially stable fats like beef fat, lamb fat, and ghee. These fats are safe and healthy, and french fries cooked in them make a healthy dish. I recommend using beef fat, as french fries cooked in it have an amazing taste. Moreover, classic french fries were originally fried in beef fat. Even McDonald's fast-food chain fried their french fries in beef fat until the late 1980s. Then, the CSPI organization forced them to switch to hydrogenated oils, actively promoting propaganda against saturated fats. Now, McDonald's fries their potatoes in a dangerous mix of the worst vegetable oils, adding "beef flavoring" to make them vaguely remind us of the real, authentic fries.
French Fries from fast food restaurants ingredients:
Potatoes, Vegetable Oil (canola Oil, Corn Oil, Soybean Oil, Hydrogenated Soybean Oil, Natural Beef Flavor [wheat And Milk Derivatives]*), Dextrose, Sodium Acid Pyrophosphate (Maintain Color), Salt. *Natural beef Flavor Contains Hydrolyzed Wheat And Hydrolyzed Milk As Starting Ingredients.
The good news is that you can make your french fries using quality ingredients. Those who don't like fried food can relax and enjoy boiled or steamed potatoes.
Healthy French fries recipe:
Large potatoes
Clarified beef fat
Unrefined salt
Peel and wash the potatoes, then cut them into thin strips.
Cover the cut potatoes with cold water and soak for an hour. This removes extra starch, making the fries crispier and less likely to stick when frying.
After soaking, rinse the potatoes, put them on a towel, and dry them.
Heat the fat in a deep pot (be careful when working with hot fat!). The best tool is a thick-walled sauté pan, wok, or pot. The fat should sizzle actively when you add the potatoes.
Place the potatoes in portions so they are coated with fat, and occasionally stir during frying.
When the fries turn golden, remove them with a slotted spoon or metal tongs, carefully shaking off extra fat back into the pot. Place them on a paper towel and add salt.
You can reuse the leftover beef fat for another cooking.
Remember, the most important principle of healthy eating is moderation. If you love french fries, cook them at home and don't eat them too often.
